Equipment: Large frying pan; spiraliser
Measures and names
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 400 g turkey mince (ground turkey)
- 1 x 400g tin chopped tomatoes
- 1 tbsp tomato purée (tomato paste)
- 1 tsp dried oregano
- 2 courgettes (zucchini), spiralised (or use a peeler for ribbons)
- Grated parmesan or cheddar, to serve
- Salt and black pepper
Method
- Heat the oil in a pan and cook the onion for 4 minutes. Add the garlic and turkey mince and fry for 5–6 minutes, until browned.
- Stir in the tomato purée and oregano, then add the chopped tomatoes. Season and simmer for 10 minutes.
- Meanwhile, cook the courgetti in a dry pan, or in boiling water, for 1–2 minutes, until just softened. Drain well.
- Serve the bolognese over the courgetti with grated cheese on top.
Swaps and tips
Use beef mince if you prefer. Ready-spiralised courgette is sold in most supermarkets, or serve over shredded cabbage instead.
