Lighter meatballs the kids will love.
Equipment: Large frying pan with lid
Measures and names
Ingredients
- 600 g turkey mince (ground turkey)
- 1 egg
- 40 g grated parmesan
- 2 garlic cloves
- 1 tsp oregano
- 1 onion, chopped
- 2 x 400g tin chopped tomatoes
- 1 tbsp olive oil
- Fresh basil
- Courgetti (zucchini noodles) or salad, to serve
Method
- Mix the turkey mince, egg, parmesan, half the garlic and the oregano with plenty of seasoning. Roll into about 16 meatballs — wet hands make this easier.
- Heat the oil in a large pan and brown the meatballs all over, 5 minutes. Turkey is lean, so keep the heat moderate.
- Cook the onion and remaining garlic for 5 minutes, then add the tomatoes. Season and simmer for 5 minutes.
- Return the meatballs, cover, and simmer gently for 15 minutes, until cooked through with no pink in the middle.
- Taste, tear in the basil, and serve over courgetti or with a salad.
Swaps and tips
Turkey thigh mince is juicier than breast. Roll them small for children, and freeze a batch raw for a quick supper.
Add carbs for the family (optional)
For the family, serve over wholewheat pasta, or with a chunk of sourdough. Keep the on-plan version over courgetti or salad.
