Equipment: Baking tray; baking paper

Ingredients

  • 2 salmon fillets, about 130 g each
  • Salt

Optional extras

  • Lemon slices
  • A few sprigs of dill
  • A pinch of chilli flakes (red pepper flakes)
  • 1 tsp pesto per fillet (not nut-free)

Method

  1. Heat the oven to 200°C (fan 180°C). Put the salmon skin-side down on a lined tray and season with salt.
  2. Add any extras on top and bake for 12 to 15 minutes, until it flakes easily.

Swaps and tips

Frozen fillets can go straight in from frozen: add 8 to 10 minutes. Trout, cod and haddock cook the same way. Serve with salad or roast veg.
