Juicy bunless turkey burgers with grated halloumi running through them, served on a crisp salad.
Equipment: Mixing bowl; frying pan
Measures and names
Ingredients
- 500 g turkey mince (ground turkey) (thigh if possible)
- 100 g halloumi, coarsely grated
- 2 spring onions (scallions), finely sliced
- 1 tsp dried oregano
- 0.5 tsp smoked paprika
- 1 egg, beaten
- 1 tbsp olive oil, for frying
- 2 little gem (baby romaine) lettuces, leaves separated
- 0.5 cucumber, ribboned or sliced
- 150 g cherry tomatoes, halved
- 1 tbsp extra virgin olive oil, for the salad
- salt and black pepper
Method
- Put the turkey mince, halloumi, spring onion, oregano, paprika and egg in a bowl. Season with pepper and a little salt (halloumi is salty) and mix well with your hands.
- Shape into 4 patties about 2cm thick. Chill for 10 minutes if you have time - it helps them hold together.
- Heat the olive oil in a frying pan over a medium heat. Cook the patties for 5-6 minutes each side until golden and cooked through (no pink in the middle, or 74°C in the centre).
- Meanwhile, toss the lettuce, cucumber and tomatoes with the extra virgin olive oil and a pinch of salt.
- Pile the salad onto plates and top with the burgers. Serve with mayonnaise or a spoonful of soured cream if you like.
Swaps and tips
Turkey thigh mince is juicier and cheaper than breast. Chicken or pork mince also work. Make double and chill uncooked patties for tomorrow, or wrap the cooked burgers in lettuce leaves with mayonnaise for a hand-held version.
