Equipment: Frying pan

Ingredients

  • 300 g lamb's or calf's liver, sliced
  • 2 onions, sliced
  • 15 g butter

Optional extras

  • A few sage leaves
  • A splash of stock for gravy
  • Black pepper

Method

  1. Melt the butter in a pan and cook the onions gently for 10 minutes until soft and golden. Push to one side.
  2. Season the liver and fry for 1 to 2 minutes each side, so it's still just pink inside. Serve with the onions.

Swaps and tips

Overcooked liver goes tough, so keep it brief. Liver is very rich in vitamin A; avoid it if you're pregnant.
