Equipment: Baking dish

Ingredients

  • 200 g feta (a whole block)
  • 300 g cherry tomatoes
  • 1 red onion, sliced
  • 2 garlic cloves
  • 1 tsp oregano
  • 3 tbsp olive oil
  • Handful of olives and basil
  • Green salad, to serve

Method

  1. Heat the oven to 200°C (fan 180°C). Put the cherry tomatoes, onion, garlic and olives in a baking dish with the olive oil and oregano, and season with black pepper.
  2. Nestle the whole block of feta into the middle and spoon a little oil over it.
  3. Bake for 25 minutes, until the tomatoes have burst and the feta is soft and golden at the edges.
  4. Crush the feta and tomatoes together into a rough sauce — taste before adding salt; feta and olives bring plenty.
  5. Scatter with basil and serve with a green salad, or spooned over courgetti.

Swaps and tips

Inspired by baked feta pasta — serve over courgetti instead of pasta to keep it low-carb.
