Equipment: Griddle pan; mixing bowl

Ingredients

  • 1 x 225g block halloumi, sliced and griddled
  • ½ cucumber
  • 200 g tomatoes
  • ½ red onion
  • a handful of olives
  • 3 tbsp olive oil
  • 1 tsp oregano
  • Splash of red wine vinegar
  • Fresh mint
  • Black pepper

Method

  1. Griddle the halloumi slices for 1–2 minutes each side, until golden with char lines.
  2. Cut the cucumber and tomatoes into generous chunks, slice the onion finely, and combine in a bowl with the olives.
  3. Whisk the olive oil, vinegar and oregano and toss through the salad.
  4. Pile onto plates and top with the warm halloumi.
  5. Scatter with mint and season with black pepper only — halloumi and olives bring the salt.
