Equipment: Blender or stick blender, baking tray, baking paper

Ingredients

  • 300 g cottage cheese
  • 3 eggs
  • 1 tsp dried oregano
  • 1 tsp garlic granules
  • ½ tsp salt
  • 3 tbsp tomato purée (tomato paste)
  • 2 tbsp water
  • ½ tsp dried oregano
  • A pinch of garlic granules
  • Salt
  • 100 g grated mozzarella

Optional extras

  • 1 small handful of fresh basil leaves, to finish

Method

  1. Heat the oven to 180°C (fan 160°C) and line a baking tray with baking paper.
  2. Blend the cottage cheese, eggs, oregano, garlic granules and salt until smooth, about 30 seconds.
  3. Pour onto the paper and spread into a 25 cm round no thicker than 1 cm.
  4. Bake for 30–35 minutes until deep golden and set. Leave for 5 minutes to firm up, and turn the oven up to 200°C (fan 180°C).
  5. While the base bakes, mix the tomato purée with the water, oregano, garlic granules and a pinch of salt to make the sauce.
  6. Spread the sauce over the base, leaving a small border, and scatter over the mozzarella. Bake for 5–8 minutes more until the cheese bubbles. Scatter over the basil and cut into slices.

Swaps and tips

Bake the base thin and until deep golden; that is what stops it tasting eggy. It is soft and foldable rather than crisp, so eat it with a knife and fork or fold a slice over like a calzone. Two smaller rounds, one each, are easier to handle than one large one. The plain base also makes a good wrap for the next day.

Easy variations

  • Chicken and pepper (cooked chicken, red pepper, red onion)
  • Tuna and red onion (a drained tin of tuna, red onion, olives)
  • Mushroom and spinach (sliced mushrooms, wilted spinach, a little garlic)
  • Egg and ham (ham, with an egg cracked into the middle for the last 8 minutes)
  • Spicy (pepperoni or chorizo, jalapeños, chilli flakes)
  • Greek (feta, olives, cherry tomatoes)
  • Breakfast (bacon, egg, mushrooms)
