Equipment: Baking tray, baking paper, grater, clean tea towel

Ingredients

  • 1 courgette (zucchini), about 200 g
  • 100 g ground almonds
  • 3 eggs
  • 30 g grated parmesan
  • 1 tsp dried oregano
  • ½ tsp salt, plus a pinch for the courgette
  • 1 tsp olive oil, for the paper
  • 3 tbsp tomato purée (tomato paste)
  • 2 tbsp water
  • ½ tsp dried oregano
  • A pinch of garlic granules
  • Salt
  • 100 g grated mozzarella

Optional extras

  • 1 small handful of fresh basil leaves, to finish

Method

  1. Heat the oven to 200°C (fan 180°C). Line a baking tray with baking paper and brush it with the oil.
  2. Coarsely grate the courgette, toss with a pinch of salt and leave for 5 minutes. Tip into a clean tea towel and squeeze out as much water as you can.
  3. Mix the courgette with the ground almonds, eggs, parmesan, oregano and ½ tsp salt to make a thick batter.
  4. Spread the batter on the paper into a 25 cm round about 1 cm thick. Bake for 15–18 minutes until golden and firm.
  5. While the base bakes, mix the tomato purée with the water, oregano, garlic granules and a pinch of salt to make the sauce.
  6. Spread the sauce over the base, leaving a small border, and scatter over the mozzarella. Bake for 8 minutes more until the cheese bubbles. Scatter over the basil and cut into slices.

Swaps and tips

Squeezing the courgette is the step that matters; skip it and the middle stays wet. Ground sunflower seeds work in place of the almonds if you need it nut-free. The base is soft rather than crisp, so eat it with a knife and fork or fold a slice in half. Like the mozzarella dough base this one is rich, so it suits a treat night rather than every week.

Easy variations

  • Chicken and pepper (cooked chicken, red pepper, red onion)
  • Tuna and red onion (a drained tin of tuna, red onion, olives)
  • Mushroom and spinach (sliced mushrooms, wilted spinach, a little garlic)
  • Egg and ham (ham, with an egg cracked into the middle for the last 8 minutes)
  • Spicy (pepperoni or chorizo, jalapeños, chilli flakes)
  • Greek (feta, olives, cherry tomatoes)
  • Breakfast (bacon, egg, mushrooms)
