Equipment: Baking tray, baking paper, rolling pin

Ingredients

  • 25 g chia seeds
  • 120 ml warm water, about
  • 75 g buckwheat flour
  • 1 tsp dried oregano
  • ½ tsp salt
  • 2 tsp olive oil
  • 3 tbsp tomato purée (tomato paste)
  • 2 tbsp water
  • ½ tsp dried oregano
  • A pinch of garlic granules
  • Salt
  • 150 g grated mozzarella
  • 30 g grated parmesan

Optional extras

  • 1 small handful of fresh basil leaves, to finish

Method

  1. Mix the chia seeds with the warm water in a bowl and leave for 10 minutes until they form a gel. Meanwhile heat the oven to 220°C (fan 200°C) and line a baking tray with baking paper.
  2. Stir the buckwheat flour, oregano, salt and olive oil into the chia gel to make a soft dough. Add a splash more water if it is dry.
  3. Roll or press the dough between two sheets of baking paper into a 25 cm round, as thin as you can. Peel off the top sheet and slide the base on its paper onto the tray.
  4. Bake for 12–15 minutes until the edges crisp. While the base bakes, mix the tomato purée with the water, oregano, garlic granules and a pinch of salt to make the sauce.
  5. Spread the sauce over the base, leaving a small border, and scatter over the mozzarella and parmesan. Bake for 8 minutes more until the cheese bubbles. Scatter over the basil and cut into slices.

Swaps and tips

Buckwheat is a seed, not wheat, and has no gluten, but it is still mostly starch, so this is the highest carb base of the pizza recipes on the site. It suits people with more room for carbs, such as those training hard. The base itself has little protein, so this one carries more cheese than the others. The dough has no egg or dairy, so with a dairy-free cheese the whole pizza is vegan, with less protein.

Easy variations

  • Chicken and pepper (cooked chicken, red pepper, red onion)
  • Tuna and red onion (a drained tin of tuna, red onion, olives)
  • Mushroom and spinach (sliced mushrooms, wilted spinach, a little garlic)
  • Egg and ham (ham, with an egg cracked into the middle for the last 8 minutes)
  • Spicy (pepperoni or chorizo, jalapeños, chilli flakes)
  • Greek (feta, olives, cherry tomatoes)
  • Breakfast (bacon, egg, mushrooms)
