Equipment: Large frying pan

Ingredients

  • 600 g pork shoulder, thinly sliced
  • 2 lemongrass stalks, finely chopped
  • 3 garlic cloves, crushed
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp oil
  • Lime, herbs and salad, to serve
  • Salt

Optional extras

  • 1 red chilli

Method

  1. Mix the lemongrass, garlic, fish sauce, soy sauce and chilli. Stir in the pork and marinate for 20 minutes.
  2. Heat the oil in a large pan over a medium-high heat.
  3. Cook the pork in a single layer for 8–10 minutes, turning, until deeply caramelised and cooked through.
  4. Taste — the fish sauce means no salt is needed.
  5. Serve over a fresh herb salad with a generous squeeze of lime.

Swaps and tips

Use a jar of ready-chopped lemongrass to save time. Serve over a crunchy salad rather than rice noodles. Use tamari instead of soy sauce to keep it gluten-free.
