Seared steak with rich blue cheese.
Equipment: Frying pan or griddle
Measures and names
Ingredients
- 2 steaks (sirloin or rump)
- Salad leaves and rocket (arugula)
- 100 g cherry tomatoes
- ½ red onion, sliced
- 60 g blue cheese, crumbled
- 3 tbsp olive oil, 1 tsp mustard, vinegar (dressing)
- Salt and black pepper
Method
- Take the steaks out of the fridge 15 minutes ahead and season well with salt and pepper.
- Sear in a very hot pan for 2–3 minutes each side for medium-rare. Rest on a warm plate for 5 minutes — resting is what keeps them juicy.
- Whisk the olive oil, mustard and vinegar and toss with the leaves, rocket, tomatoes and onion.
- Slice the steak thinly across the grain and lay it over the salad with any resting juices.
- Scatter over the blue cheese and finish with black pepper.
Swaps and tips
Let the steak rest before slicing so it stays juicy. A handful of walnuts adds crunch.
