Equipment: Non-stick frying pan

Ingredients

  • 3 eggs
  • Knob of butter (about 15g)
  • 1 smoked mackerel fillet (about 75g), skin removed and flaked
  • Small handful of chives or parsley
  • Black pepper

Optional extras

  • 1 tbsp cream or milk

Method

  1. Beat the eggs with the cream, if using, and a little black pepper.
  2. Melt the butter in a non-stick pan over a low-medium heat.
  3. Pour in the eggs and stir gently until almost set.
  4. Fold through the flaked mackerel and herbs, warm for a few seconds, and serve. Taste before adding salt — smoked mackerel already seasons the dish.

Swaps and tips

Ready-cooked smoked mackerel is inexpensive and keeps well in the fridge. Serve with a few cherry tomatoes or wilted spinach.
