Equipment: Non-stick frying pan

Ingredients

  • 3 eggs
  • Knob of butter (about 15g)
  • 60 g smoked salmon, torn into strips
  • Small handful of chives, snipped
  • Black pepper

Optional extras

  • 1 tbsp cream or crème fraîche

Method

  1. Beat the eggs with the cream, if using, and a little black pepper.
  2. Melt the butter in a non-stick pan over a low-medium heat.
  3. Pour in the eggs and stir gently and continuously until softly set.
  4. Take off the heat, fold through the smoked salmon and chives, and serve straight away. Taste before adding salt — smoked salmon already seasons the dish.

Swaps and tips

Smoked salmon trimmings are much cheaper than slices and work perfectly here. Keep the heat low for soft, creamy eggs.
