A well-seasoned steak, seared hot and rested.
Plus 5 minutes resting.
Equipment: Heavy frying pan
Measures and names
Ingredients
- 1 steak, sirloin, ribeye or rump, about 200 g
- 1 tsp oil
- Salt
Optional extras
- A knob of butter
- 1 garlic clove, lightly crushed
- A sprig of thyme or rosemary
- Black pepper
Method
- Take the steak out of the fridge 20 minutes before cooking if you can. Pat it dry and season well with salt.
- Heat the oil in a heavy pan until very hot. Cook the steak for 2 to 3 minutes each side for medium-rare, a little longer for well done.
- If using, add the butter, garlic and herbs for the last minute and spoon the butter over the steak.
- Rest on a plate for 5 minutes, then slice.
Swaps and tips
Serve with a salad or some green veg. Adding butter means it's no longer dairy-free. Lamb steaks or pork chops cook the same way.
