Equipment: Large frying pan

Ingredients

  • 400 g paneer, cubed
  • 400 g spinach, wilted and chopped
  • 1 onion, 3 garlic cloves
  • thumb of ginger
  • 2 tbsp garam masala
  • 1 tsp turmeric
  • 100 ml double cream (heavy cream)
  • 2 tbsp oil
  • Cauliflower rice, to serve

Method

  1. Fry the paneer in 1 tablespoon of oil until golden on all sides. Set aside.
  2. Cook the onion in the remaining oil for 5 minutes, then add the garlic, ginger, garam masala and turmeric for 1 minute.
  3. Stir in the wilted chopped spinach and cook for 3 minutes. Blend roughly for a smoother saag if you prefer.
  4. Add the cream and simmer gently for 5 minutes. Season with salt.
  5. Return the paneer to warm through, and serve over cauliflower rice.

Swaps and tips

Frozen spinach is cheap and works perfectly — defrost and squeeze dry. Blend the sauce for a smoother finish.
