Lemon-oregano grilled pork skewers — Greece.
plus marinating
Equipment: Grill or griddle pan; skewers
Measures and names
Ingredients
- 700 g pork shoulder, cubed
- 3 tbsp olive oil
- juice of 1 lemon
- 3 garlic cloves
- 1 tbsp dried oregano
- Salt and black pepper
- Tzatziki and Greek salad, to serve
- Skewers
Method
- Mix the olive oil, lemon juice, garlic, oregano, salt and pepper. Coat the pork and marinate for at least 30 minutes — overnight is better.
- Thread onto skewers, leaving a little space between the cubes so they char rather than steam.
- Grill or griddle on high for 12–15 minutes, turning every few minutes, until charred outside and cooked through.
- Rest for a few minutes.
- Serve with tzatziki and a Greek salad.
Swaps and tips
Marinate overnight for the best flavour. Serve with salad and tzatziki rather than pitta.
