Equipment: Large frying pan

Ingredients

  • 700 g pork shoulder, thinly sliced
  • 2 tsp chipotle paste
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 3 garlic cloves
  • juice of 1 lime
  • 1 tbsp oil
  • Little gem lettuce (baby romaine), avocado, onion and coriander (cilantro)
  • Soured cream (sour cream), to serve
  • Salt

Method

  1. Mix the chipotle paste, paprika, cumin, oregano, garlic, lime juice, oil and a pinch of salt. Stir in the pork and marinate for 20 minutes.
  2. Heat a large pan over a very high heat and fry the pork in a single layer for 6–8 minutes, until charred at the edges and cooked through.
  3. Set out the lettuce leaves and toppings.
  4. Fill the leaves with the sizzling pork, avocado, onion and coriander.
  5. Finish with soured cream and a squeeze of lime.

Swaps and tips

Al pastor usually has pineapple; a squeeze of lime gives brightness without the sugar. Use lettuce cups instead of tortillas.
