Quick savoury pork with greens — China.
Equipment: Wok or large frying pan
Measures and names
Ingredients
- 500 g pork mince (ground pork) or strips
- 300 g cabbage, shredded
- 1 onion
- 3 garlic cloves
- Thumb of ginger
- 1 chilli
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp oil
- Spring onion (scallion) and sesame seeds
- Salt and black pepper
Method
- Heat the oil in a wok over a very high heat and stir-fry the pork for 5–6 minutes, breaking up mince or searing strips, until browned and cooked through.
- Add the onion, cabbage, garlic, ginger and chilli and stir-fry for 5 minutes, until the cabbage has wilted but keeps some bite.
- Stir in the soy sauce and sesame oil and toss for 30 seconds.
- Taste before adding salt — the soy usually brings enough.
- Scatter with spring onion and sesame seeds and serve.
Swaps and tips
A quick, low-cost dinner that uses up cabbage. Plain soy sauce keeps it free from added sugar — no rice needed. Use tamari instead of soy sauce to keep it gluten-free.
