Equipment: Frying pan

Ingredients

  • 2 salmon fillets
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 garlic clove, crushed
  • Sesame seeds and spring onion (scallion)
  • Stir-fried greens, to serve

Optional extras

  • 1–2 tsp sweetener

Method

  1. Pat the salmon dry. Pan-fry skin-side down for 3–4 minutes, until crisp, then 2–3 minutes on the flesh side. Remove to a plate.
  2. Add the soy sauce, vinegar, ginger, garlic and sweetener (if using) to the pan.
  3. Bubble for 1–2 minutes, until glossy and slightly syrupy.
  4. Return the salmon and turn to coat in the glaze.
  5. Scatter with sesame seeds and spring onion and serve with stir-fried greens. No added salt — the glaze covers it.

Swaps and tips

Bottled teriyaki is full of sugar — this lighter glaze uses just a touch of sweetener. Serve with stir-fried greens, not rice. Use tamari instead of soy sauce to keep it gluten-free.
