Equipment: Grill; foil-lined tray

Ingredients

  • 2 salmon fillets
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • Spring onion (scallion), to serve
  • Stir-fried greens, to serve

Method

  1. Mix the miso, soy sauce, ginger and sesame oil into a paste. Spread over the salmon and leave for 15 minutes (or overnight, covered, in the fridge).
  2. Heat the grill to medium-high and line a tray with foil.
  3. Grill the salmon for 8–10 minutes, until the glaze is bubbling and caramelised at the edges and the fish just flakes — watch closely; miso catches quickly.
  4. Scatter with sesame seeds and spring onion.
  5. Serve with stir-fried greens. No added salt — the miso and soy season it fully.

Swaps and tips

Miso has a little natural sweetness, so you don’t need added sugar. Watch it under the grill so the glaze doesn’t catch. Use tamari instead of soy sauce to keep it gluten-free.
