Equipment: Large frying pan

Ingredients

  • 1 x 225g block halloumi, sliced
  • 2 peppers
  • 1 onion, sliced
  • 1 tbsp fajita spice
  • 1 tbsp oil
  • Juice of 1 lime
  • Avocado, soured cream (sour cream) and grated cheese
  • Shredded lettuce, to serve
  • Coriander (cilantro)

Method

  1. Fry the halloumi slices in a dry hot pan for 1–2 minutes each side, until golden. Set aside.
  2. Toss the peppers and onion with the fajita spice, then fry in the oil over a high heat for 6 minutes, until softened and charred at the edges.
  3. Return the halloumi and squeeze over the lime.
  4. Pile shredded lettuce into bowls and top with the sizzling halloumi and peppers.
  5. Finish with avocado, soured cream, grated cheese and coriander — no added salt; halloumi is salty.

Swaps and tips

Use lettuce leaves as wraps instead of tortillas. Add guacamole if you like.
