Ingredients

  • 4 white fish fillets
  • 1 onion
  • 3 garlic cloves
  • 1 x 400g tin chopped tomatoes
  • 2 tbsp olive oil
  • 1 tsp oregano
  • a handful of parsley
  • 100 g olives
  • ½ lemon

  3. Scatter with the olives.
  4. Bake for 18–20 minutes, until the fish flakes easily.
  5. Finish with parsley and a squeeze of lemon, and serve with a Greek salad or wilted greens.
