Equipment: Frying pan; baking dish

Ingredients

  • 400 g raw prawns (shrimp)
  • 1 onion
  • 2 garlic cloves
  • 1 x 400g tin chopped tomatoes
  • 1 tsp oregano
  • a pinch of chilli
  • 150 g feta, crumbled
  • 2 tbsp olive oil
  • Parsley, to serve
  • Green salad, to serve

Method

  1. Heat the oil in a pan and cook the onion for 5 minutes. Add the garlic, then the tomatoes, oregano and chilli.
  2. Simmer for 8 minutes, until thick. Season with pepper and only a little salt — the feta is salty.
  3. Heat the oven to 200°C (fan 180°C). Stir the raw prawns through the sauce, tip into a baking dish and scatter over the feta.
  4. Bake for 10 minutes, until the prawns are pink and cooked and the feta has softened.
  5. Scatter with parsley and serve with a green salad.

Swaps and tips

You can make this entirely on the hob if you prefer — just cover and simmer until the prawns are pink. Serve with a salad.
