Equipment: Large frying pan

Ingredients

  • 400 g firm tofu, pressed and cut into thick slices
  • 2 tbsp sesame seeds
  • 2 tbsp tamari, divided
  • 2 tbsp olive or coconut oil, divided
  • 200 g tenderstem broccoli (broccolini)
  • 2 pak choi (bok choy), halved
  • 100 g frozen shelled edamame beans
  • 2 garlic cloves, sliced
  • 1 tsp sesame oil

Optional extras

  • 2 spring onions (scallions), sliced

Method

  1. Brush the tofu with 1 tbsp tamari and press both sides into the sesame seeds.
  2. Heat 1 tbsp oil in a large frying pan and fry the tofu for 3-4 minutes a side until crisp and golden. Keep warm.
  3. Add the rest of the oil, the broccoli and edamame with a splash of water, and stir-fry for 4 minutes. Add the pak choi and garlic for 2 minutes more.
  4. Toss the greens with the remaining tamari and the sesame oil, and serve with the tofu and spring onions.

Swaps and tips

Pressing the tofu helps it crisp: wrap it in a clean tea towel and put something heavy on top for 10 minutes. Any green veg works: broccoli, spinach or green beans.
