Paprika chicken drumsticks roasted with chunks of sweet, golden swede and onion.
Equipment: Large roasting tin
Measures and names
Ingredients
- 8 chicken drumsticks
- 1 swede (rutabaga) (about 800 g), peeled and cut into 2 cm chunks
- 1 onion, cut into wedges
- 2 tsp smoked paprika
- 1 tsp dried mixed herbs
- 2 tbsp oil
- Salt and black pepper
Method
- Heat the oven to 200°C (fan 180°C).
- Toss the swede and onion in the tin with half the oil, half the paprika and some salt. Roast for 10 minutes.
- Rub the drumsticks with the rest of the oil, paprika, herbs and seasoning, add them to the tin and roast for 35 minutes more, turning everything once, until the chicken is cooked through and the swede is golden.
Swaps and tips
Swede is one of the cheapest vegetables and roasts like a lower-carb potato. Cut it into even 2 cm chunks so it cooks at the same pace as the chicken.
Easy variations
- Use thighs instead of drumsticks
- Swap the swede for celeriac or cauliflower
- Use cumin or curry powder instead of paprika
- Add a few cabbage wedges for the last 20 minutes
