A rich, savoury bake with no pastry.
Equipment: Frying pan; baking dish
Measures and names
Ingredients
- 6 eggs
- 200 ml double cream (heavy cream)
- 250 g mushrooms, sliced
- 1 onion
- 2 handfuls of spinach
- 100 g cheddar, grated
- 1 tbsp oil
- Pinch of nutmeg
- Green salad, to serve
Method
- Heat the oil in a pan and cook the onion and mushrooms for 7 minutes, until golden and any liquid has cooked off. Wilt in the spinach, then tip into an oiled baking dish.
- Beat the eggs with the cream, nutmeg and plenty of seasoning.
- Pour over the vegetables and scatter with the cheddar.
- Heat the oven to 180°C (fan 160°C) and bake for 25–30 minutes, until just set with a slight wobble in the middle.
- Rest for 10 minutes before slicing — it firms as it cools. Serve with a green salad.
Swaps and tips
No pastry keeps it low-carb and quick. Any vegetables work in place of the mushrooms.
