Fragrant golden cauliflower rice cooked with whole cumin, cardamom, cloves and cinnamon, just like a restaurant pilau.
Side dish. Good with chicken tikka, lamb curry or tandoori salmon. Find a main
Equipment: Food processor, large frying pan
Measures and names
Ingredients
- 1 large cauliflower, about 800 g, broken into florets
- 1 tbsp butter or ghee
- 1 tsp cumin seeds
- 4 green cardamom pods, lightly crushed
- 4 cloves
- 1 small cinnamon stick
- 1 bay leaf
- ½ small onion, finely chopped
- ½ tsp ground turmeric
- 2 tbsp fresh coriander (cilantro), chopped
- Salt and black pepper
Method
- Pulse the cauliflower florets in a food processor, in batches, until they look like grains of rice.
- Melt the butter in a large frying pan over a medium heat. Add the cumin seeds, cardamom, cloves, cinnamon and bay leaf and fry for about 1 minute until the cumin sizzles and smells toasty.
- Add the onion and cook for 4-5 minutes, stirring, until soft and lightly golden. Stir in the turmeric for a few seconds.
- Tip in the cauliflower and 1 tsp salt and stir-fry, uncovered, for 5-6 minutes until evenly golden and just tender.
- Fluff with a fork, scatter over the coriander and serve.
Swaps and tips
For a dairy-free version, use olive oil or coconut oil instead of butter. Leftovers keep for 2 days in the fridge; reheat in a hot pan until steaming. Pick out the whole spices before serving if you prefer.
Easy variations
- Add a handful of frozen peas with the cauliflower
- Stir in a few fried curry leaves
- Finish with a small handful of toasted flaked almonds
- Add a pinch of saffron soaked in 1 tbsp hot water with the turmeric
