Equipment: Large frying pan
Measures and names
Ingredients
- 1 tbsp olive oil
- 400 g mushrooms, thickly sliced
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2cm piece fresh ginger, grated
- 1 green chilli, finely chopped
- ½ tsp ground turmeric
- 1 tsp ground coriander
- ½ tsp chilli powder
- 200 g chopped tomatoes, (½ tin)
- 150 g frozen peas
- ½ tsp garam masala
- 1 small handful coriander (cilantro), chopped
- Salt
Method
- Heat half the oil in a large frying pan over a high heat and fry the mushrooms for 5-6 minutes until golden. Tip onto a plate.
- Add the remaining oil and the cumin seeds to the pan, lower the heat to medium and add the onion. Cook for 6-8 minutes until soft and golden, then add the garlic, ginger and chilli and cook for 1 minute.
- Stir in the turmeric, ground coriander and chilli powder, then add the tomatoes and a splash of water. Simmer for 5 minutes until thick and the oil starts to separate.
- Return the mushrooms to the pan with the peas and 100 ml water. Simmer for 5 minutes until the peas are tender, then stir in the garam masala, season and scatter with coriander.
Swaps and tips
Brown the mushrooms well before adding the masala so they don't go watery. Keeps for 3 days in the fridge and freezes well.
Easy variations
- Stir in a couple of tablespoons of cream or yoghurt at the end
- Add a handful of spinach with the peas
- Use a pinch of kasuri methi (dried fenugreek)
- Add cubes of paneer to make it more substantial
