Equipment: Large lidded frying pan or karahi

Ingredients

  • 1 large cauliflower, about 700 g, cut into small florets
  • 1½ tbsp olive oil
  • 1 tsp cumin seeds
  • 1 small onion, finely chopped
  • 3 garlic cloves, grated
  • 3 cm piece of ginger, grated
  • 1 green chilli, finely chopped
  • 2 ripe tomatoes, finely chopped
  • ½ tsp ground turmeric
  • 1 tsp ground coriander
  • ½ tsp Kashmiri chilli powder
  • ½ tsp garam masala
  • 2 tbsp fresh coriander (cilantro), chopped
  • ½ lemon, juiced
  • Salt and black pepper

Method

  1. Heat the oil in a large frying pan over a medium heat. Add the cumin seeds and let them sizzle for 30 seconds, then add the onion and cook for 6-8 minutes until soft and golden.
  2. Stir in the garlic, ginger and green chilli for 1 minute, then add the tomatoes, turmeric, ground coriander and chilli powder. Cook for 4-5 minutes, mashing the tomatoes, until they break down into a thick paste and the oil starts to separate.
  3. Add the cauliflower, 1 tsp salt and 4 tbsp water and stir to coat every floret. Cover and cook over a low-medium heat for 10-12 minutes, stirring now and then, until the cauliflower is tender but still holds its shape.
  4. Take the lid off, sprinkle over the garam masala and cook for 2 minutes more so any liquid evaporates. Finish with the lemon juice and fresh coriander.

Swaps and tips

Ghee instead of olive oil gives a richer flavour but is no longer vegan. It tastes even better the next day and keeps for 3 days in the fridge.

Easy variations

  • Add a handful of spinach for the last 2 minutes
  • Finish with a squeeze of lemon and a spoonful of yoghurt
  • Add 1 tsp kasuri methi (dried fenugreek leaves) with the garam masala
  • Stir in a handful of peas with the cauliflower
