Equipment: Large frying pan or griddle

Ingredients

  • 600 g beef steak, thinly sliced
  • 1 tbsp shawarma spice mix, or mixed baharat-style spice
  • 1 tbsp olive oil
  • 80 g salad leaves
  • 0.5 cucumber, chopped
  • 2 tomatoes, chopped
  • 0.5 red onion, finely sliced
  • 3 tbsp full-fat Greek yoghurt, for the dressing
  • 1 garlic clove, crushed, for the dressing
  • 0.5 lemon, juiced, for the dressing
  • 10 g fresh parsley
  • salt and black pepper

Optional extras

  • pickled chillies

Method

  1. Toss the beef with the shawarma spice, oil and a pinch of salt, and marinate for at least 15 minutes.
  2. Mix the yoghurt with the garlic, lemon juice and a pinch of salt for the dressing.
  3. Heat a large pan or griddle until very hot and sear the beef in a single layer for 3–4 minutes, turning once, until charred at the edges and just cooked.
  4. Pile the salad leaves, cucumber, tomato and red onion into bowls.
  5. Top with the sizzling beef, drizzle generously with the garlic-yoghurt, and finish with parsley and pickled chillies if you like.

Swaps and tips

Serve with cauliflower ‘tabbouleh’ instead of pitta. The yoghurt dressing doubles as a cooling sauce.
