A quick Indian-style mince curry with pork, tomatoes and peas.
Equipment: Large frying pan
Measures and names
Ingredients
- 750 g pork mince (ground pork)
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 thumb-sized piece of ginger, grated
- 2 tbsp medium curry powder
- 1 400 g tin of chopped tomatoes
- 150 g frozen peas
- Salt and black pepper
Method
- Brown the mince in a large frying pan for 8 minutes. Add the onion and cook for 5 minutes.
- Stir in the garlic, ginger and curry powder for 1 minute.
- Add the tomatoes and a splash of water and simmer for 10 minutes until thick. Stir in the peas for the last 3 minutes, season and serve.
Swaps and tips
Pork mince is usually cheaper than beef and takes on spices beautifully. Cook the curry powder in the fat for a minute to bring out the flavour.
Easy variations
- Use beef, lamb or turkey mince
- Add a drained tin of lentils instead of some of the mince
- Swap the peas for spinach
- Serve with plain yoghurt and fresh coriander
