Spiced minced-lamb skewers — Middle East.
Equipment: Grill or griddle pan; skewers
Measures and names
Ingredients
- 600 g lamb or beef mince (ground beef)
- 1 onion, grated and squeezed dry
- 3 garlic cloves, crushed
- 1 tbsp cumin
- 1 tsp coriander
- Handful of parsley, chopped
- Salt and black pepper
- Tzatziki and salad, to serve
- Skewers
Method
- Squeeze the grated onion really dry — wet onion makes the koftas fall apart.
- Mix the mince with the onion, garlic, cumin, coriander, parsley and plenty of seasoning, working it for a minute so it binds.
- Shape around skewers into sausage shapes and chill for 10 minutes if you have time.
- Grill or griddle on high for 10–12 minutes, turning, until charred outside and cooked through with no pink in the middle.
- Rest briefly and serve with tzatziki and a chopped salad.
Swaps and tips
Children often prefer them shaped as small patties rather than on skewers. The raw mixture freezes well.
Add carbs for the family (optional)
For the family, add warm wholemeal flatbread or pitta, or a scoop of couscous. Keep the on-plan version with extra salad and tzatziki.
