Quick savoury beef with greens — Japan.
Equipment: Wok or large frying pan
Measures and names
Ingredients
- 500 g beef strips
- 300 g cabbage, shredded
- 1 onion, sliced
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 tsp sesame oil
- 1 tbsp oil
- Sesame seeds and spring onion (scallion), to serve
Method
- Heat the oil in a wok over a very high heat and stir-fry the beef for 2–3 minutes, until browned. Remove to a plate.
- Add the cabbage and onion and stir-fry for 4–5 minutes, until just tender but still with bite.
- Add the ginger, soy sauce and vinegar and toss for 30 seconds.
- Return the beef with its juices, drizzle with the sesame oil and toss everything together.
- Taste before adding any salt — the soy brings plenty. Scatter with sesame seeds and spring onion and serve.
Swaps and tips
This is a quick, low-cost dish that uses up cabbage. Plain soy and vinegar keep it free from added sugar. Use tamari instead of soy sauce to keep it gluten-free.
