Beef rolls around spring onion — Japan.
plus marinating
Equipment: Frying pan; cocktail sticks
Measures and names
Ingredients
- 500 g beef steak, thinly sliced into strips
- Bunch of spring onions (scallions), halved
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 garlic clove
- 1 tsp sesame oil
- 1 tbsp oil
- Sesame seeds
- Stir-fried greens, to serve
Optional extras
- 1–2 tsp sweetener
Method
- Lay the beef strips flat, place a few spring onion lengths across each, roll up tightly and secure with a cocktail stick.
- Mix the soy sauce, vinegar, ginger, garlic and sweetener (if using).
- Heat the oil in a pan over a medium-high heat and sear the rolls for 4–5 minutes, turning, until browned all over and just cooked through.
- Pour in the sauce and let it bubble for a minute, turning the rolls until glossy.
- Remove the sticks, drizzle with sesame oil, scatter with sesame seeds and serve with stir-fried greens. No added salt needed — the soy glaze covers it.
Swaps and tips
Thinly sliced ‘quick-fry’ steak or sandwich steak is ideal. Keep the sweetener minimal for low sugar. Use tamari instead of soy sauce to keep it gluten-free.
