Equipment: Large frying pan

Ingredients

  • 1½ tbsp olive oil
  • 2 dried guajillo chillies, deseeded and snipped into thin rings
  • 4 garlic cloves, thinly sliced
  • 500 g chestnut mushrooms (cremini mushrooms), quartered
  • ½ tsp dried oregano
  • ½ lime, juiced
  • 1 small handful coriander (cilantro) or parsley, chopped
  • Salt and black pepper

Method

  1. Warm the oil in a large frying pan over a low heat. Add the chilli rings and garlic and cook gently for 1-2 minutes until fragrant and the garlic is pale golden.
  2. Turn up the heat, add the mushrooms and oregano and fry for 8-10 minutes, stirring now and then, until golden and any liquid has gone.
  3. Season, squeeze over the lime and scatter with the herbs to serve.

Swaps and tips

If you can't find guajillo chillies, use 1 tsp mild chilli flakes with 1 tsp smoked paprika. Don't crowd the pan or the mushrooms will steam.

Easy variations

  • Add a splash of dry sherry with the mushrooms
  • Finish with a little crumbled feta
  • Use a mix of chestnut and oyster mushrooms
  • Add a pinch of ground cumin
