Equipment: Large frying pan or wok
Measures and names
Ingredients
- 1 tbsp coconut oil
- 1 tsp black mustard seeds
- 1 dried red chilli, broken in half
- 10 curry leaves, fresh or dried
- 1/4 tsp ground turmeric
- 400 g green beans, trimmed and finely chopped
- 3 tbsp water
- 40 g fresh grated coconut, or 25 g desiccated coconut (unsweetened shredded coconut)
- Salt and black pepper
Optional extras
- 1 tsp urad dal
Method
- Heat the coconut oil in a large frying pan over a medium-high heat. Add the mustard seeds and, once they pop, add the urad dal (if using), dried chilli and curry leaves and stir for 20-30 seconds until the dal is golden.
- Stir in the turmeric, then add the beans and a good pinch of salt and toss to coat.
- Add the water, cover and cook over a medium heat for 6-8 minutes, stirring once or twice, until the beans are tender but still bright green.
- Uncover, add the coconut and stir-fry for 1-2 minutes until any remaining water has evaporated. Taste for salt and serve.
Swaps and tips
Chopping the beans finely is the key to a good poriyal. Frozen green beans work well; there is no need to defrost them. Use desiccated coconut soaked in a little warm water if you have no fresh coconut.
Easy variations
- Use cabbage or broccoli instead of green beans
- Add a small chopped onion with the curry leaves
- Add a pinch of cumin seeds with the mustard seeds
- Finish with a squeeze of lime
