Equipment: Large frying pan

Ingredients

  • 600 g white fish, cut into strips
  • 1 tbsp Cajun or fajita spice
  • 2 tbsp oil
  • Little gem lettuce (baby romaine) leaves
  • Avocado, red onion and cherry tomatoes
  • Soured cream (sour cream) and lime
  • Shredded red cabbage
  • Salt

Method

  1. Toss the fish strips with the spice, a pinch of salt and half the oil.
  2. Heat the remaining oil in a large pan over a medium-high heat and fry the fish for 2–3 minutes each side, until lightly charred and flaking.
  3. Set out the lettuce leaves and arrange the toppings in bowls.
  4. Let everyone fill their own lettuce cups with fish, shredded cabbage, avocado and soured cream.
  5. Finish each with a squeeze of lime.

Swaps and tips

Building at the table makes this fun for children. Any firm white fish works — pollock is good value.

Add carbs for the family (optional)

For the family, serve in soft wholemeal or corn tortillas instead of lettuce cups.
