Crisp, herby fritters bound without flour.
Equipment: Frying pan; mixing bowl; sieve
Measures and names
Ingredients
- 2 courgettes (zucchini), grated and squeezed dry
- 3 eggs
- 100 g feta, crumbled
- 40 g ground almonds
- 2 spring onions (scallions)
- a handful of mint
- 2 tbsp oil, to fry
- Salt and black pepper
- Greek yoghurt and salad, to serve
Method
- Grate the courgettes, toss with a pinch of salt, leave for 5 minutes, then squeeze out as much liquid as you can — this is the difference between crisp and soggy.
- Mix the squeezed courgette with the eggs, feta, ground almonds, spring onion and mint. Season with black pepper and only a little salt.
- Heat the oil in a pan over a medium heat.
- Spoon in heaps and flatten slightly, frying for 3 minutes each side, until deep golden and set through. You'll get about 8.
- Drain briefly on kitchen paper and serve with a dollop of yoghurt and a salad. Taste before adding salt — feta already seasons the dish.
Swaps and tips
Squeeze the courgette really dry so the fritters hold together. Ground almonds replace flour as the binder.
