Equipment: Non-stick frying pan

Ingredients

  • 3 eggs
  • Knob of butter (about 15g)
  • 50 g cheddar or gruyère, grated
  • Salt and black pepper

Optional extras

  • Small handful of chives

Method

  1. Beat the eggs with a little salt and pepper.
  2. Melt the butter in a non-stick pan over a medium heat until foaming.
  3. Pour in the eggs. As they set, draw the edges in and tilt the pan so the runny egg flows out.
  4. When almost set, scatter the cheese over one half, fold, and slide onto a plate.

Swaps and tips

Take the omelette out while the centre is still a little soft — it carries on cooking. Don’t overload it with filling.
