Equipment: Wok or large frying pan

Ingredients

  • 500 g pork strips
  • 2 peppers
  • 1 onion, sliced
  • 3 garlic cloves
  • thumb of ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp oil
  • Spring onion (scallion), to serve
  • Cauliflower rice, to serve

Method

  1. Have everything chopped and ready before you start — stir-fries move fast.
  2. Heat the oil in a wok over a very high heat and stir-fry the pork for 4–5 minutes, until browned. Remove.
  3. Add the peppers and onion and stir-fry for 4 minutes, until softened with charred edges.
  4. Add the garlic and ginger for 1 minute, until fragrant.
  5. Return the pork with the soy sauce, vinegar and sesame oil and toss for a minute. Taste before salting, then serve over cauliflower rice.

Swaps and tips

Have everything chopped before you start — stir-fries cook fast. Serve over cauliflower rice, not white rice. Use tamari instead of soy sauce to keep it gluten-free.
