A warming, spiced family favourite.
Equipment: Large saucepan or casserole
Measures and names
Ingredients
- 1 tbsp oil
- 1 onion
- 1 pepper, chopped

- 1 x 400g tin kidney beans, drained

Method
- Heat the oil in a large pan and cook the onion and pepper for 5 minutes. Add the garlic, paprika and cumin for 1 minute, until fragrant.
- Add the mince and brown for 6–8 minutes, breaking it up.
- Stir in the tomatoes and kidney beans, season well, and simmer for 20 minutes, until thick.
- Taste and adjust the seasoning and heat.
- Serve over cauliflower rice with soured cream and grated cheese.
Swaps and tips
Freezes brilliantly — make a double batch. A square of 85% dark chocolate stirred in at the end adds depth without sugar, and a chopped fresh chilli lifts the heat.
Add carbs for the family (optional)
For the family, serve over brown or basmati rice, or with a baked potato. The beans add some carbs already, so keep the on-plan portion over cauliflower rice.
