Equipment: Grill or griddle pan; skewers; small saucepan

Ingredients

  • 700 g chicken thighs, cut into strips
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 2 garlic cloves, crushed
  • 1 tbsp oil
  • 4 tbsp natural peanut butter (no sugar)
  • 150 ml coconut milk
  • 1 tbsp soy sauce
  • a squeeze of lime
  • Skewers

Method

  1. Toss the chicken strips with the curry powder, turmeric, garlic, oil and a pinch of salt. Marinate for 20 minutes if you can.
  2. Thread onto skewers in ribbons.
  3. Grill or griddle on high for 10–12 minutes, turning, until charred and cooked through with no pink inside.
  4. Meanwhile, gently warm the peanut butter, coconut milk, soy sauce and lime, whisking until smooth and pourable.
  5. Serve the skewers with the warm peanut sauce and a crunchy cucumber salad. Taste before adding salt — the soy sauce already seasons the dish.

Swaps and tips

Use a natural peanut butter with no added sugar. Serve with cucumber salad rather than rice. Use tamari instead of soy sauce to keep it gluten-free.
