A very high protein pizza with a base made from chicken mince, egg and parmesan, pressed thin and baked until firm, then topped with tomato sauce and mozzarella.
Equipment: Baking tray, baking paper
Measures and names
Ingredients
- 300 g chicken mince (ground chicken)
- 1 egg
- 40 g grated parmesan
- 1 tsp garlic granules
- 1 tsp dried oregano
- ½ tsp salt
- Black pepper
- 3 tbsp tomato purée (tomato paste)
- 2 tbsp water
- ½ tsp dried oregano
- A pinch of garlic granules
- Salt
- 100 g grated mozzarella
Optional extras
- 1 small handful of fresh basil leaves, to finish
Method
- Heat the oven to 200°C (fan 180°C) and line a baking tray with baking paper.
- Mix the chicken mince, egg, parmesan, garlic granules, oregano, salt and a good grind of pepper in a bowl until it holds together.
- Press the mixture out on the paper into a 25 cm round about 5 mm thick, using wet hands or a second sheet of paper on top.
- Bake for 20 minutes until firm and lightly browned at the edges. Pour off any liquid on the tray.
- While the base bakes, mix the tomato purée with the water, oregano, garlic granules and a pinch of salt to make the sauce.
- Spread the sauce over the base, leaving a small border, and scatter over the mozzarella. Bake for 8–10 minutes more until the cheese bubbles. Scatter over the basil and cut into slices.
Swaps and tips
Turkey mince works the same way and is often cheaper. For a juicier crust, blitz 300 g cooked chicken thigh in a food processor instead of using raw mince. For a crisper base, bake it on a preheated tray or flip it for the last 5 minutes before topping. Leftovers keep for 2 days in the fridge and reheat well in a dry frying pan. Leave out the parmesan and use a dairy-free cheese to make it dairy-free.
Easy variations
- Chicken and pepper (cooked chicken, red pepper, red onion)
- Tuna and red onion (a drained tin of tuna, red onion, olives)
- Mushroom and spinach (sliced mushrooms, wilted spinach, a little garlic)
- Egg and ham (ham, with an egg cracked into the middle for the last 8 minutes)
- Spicy (pepperoni or chorizo, jalapeños, chilli flakes)
- Greek (feta, olives, cherry tomatoes)
- Breakfast (bacon, egg, mushrooms)
