Equipment: Large frying pan

Ingredients

  • 600 g beef steak, sliced into strips
  • 2 peppers (mixed colours), sliced
  • 2 onions, sliced
  • 1 tbsp fajita spice mix, check the label for added sugar and starch
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1 avocado, sliced
  • 100 g soured cream (sour cream), to serve
  • 60 g cheddar, grated, to serve
  • 1 little gem (baby romaine) or romaine lettuce, shredded, to serve
  • salt

Optional extras

  • 10 g fresh coriander (cilantro)

Method

  1. Toss the beef strips with the fajita spice and a pinch of salt.
  2. Heat the oil in a large frying pan over a very high heat. Fry the beef for 4–5 minutes, until browned at the edges but still juicy. Remove to a plate.
  3. Add the peppers and onions to the same pan and fry for 5 minutes, until softened and charred in places.
  4. Return the beef with any juices, squeeze over the lime and toss together.
  5. Build bowls: shredded lettuce first, then the sizzling beef and peppers, topped with avocado, soured cream, cheddar and coriander.

Swaps and tips

Use large lettuce leaves as wraps instead of tortillas, and check the fajita spice label — many mixes pad out with sugar and starch, or make your own with paprika, cumin and oregano.
