Equipment: Large frying pan or shallow casserole with a lid

Ingredients

  • 400 g fresh okra, stems trimmed
  • 2 tbsp red wine vinegar
  • 1 onion, finely chopped
  • 2 garlic cloves, sliced
  • 1 400 g tin of chopped tomatoes
  • 100 ml water
  • 2 tbsp olive oil
  • 1 small bunch of flat-leaf parsley, chopped
  • Salt and black pepper

Method

  1. Toss the okra with the vinegar and a pinch of salt in a bowl and leave for 15 minutes. Rinse well and drain.
  2. Heat the oil in a large frying pan over a medium heat and cook the onion for 6-8 minutes until soft. Add the garlic for 1 minute.
  3. Add the tomatoes and water, season and bring to a simmer. Add the okra and gently stir to coat.
  4. Cover and simmer gently for 25 minutes, shaking the pan now and then rather than stirring, until the okra is tender and the sauce has thickened. Stir in most of the parsley and scatter over the rest to serve.

Swaps and tips

Tossing the okra in vinegar and salt first, then rinsing, stops it going slimy. Frozen okra works well too: add it straight from frozen. It tastes even better the next day and keeps for 3 days in the fridge.

Easy variations

  • Add a crumble of feta on top before serving
  • Stir in a pinch of chilli flakes with the garlic
  • Add a chopped green pepper with the onion
  • Finish with a squeeze of lemon and fresh dill instead of parsley
