Equipment: Large lidded saucepan or sauté pan
Measures and names
Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 500 g runner beans, stringed and cut into 5 cm diagonal pieces
- 400 g tin chopped tomatoes
- 1 tsp dried oregano
- 150 ml water
- 1 small bunch of dill or flat-leaf parsley, chopped
- Salt and black pepper
Method
- Heat the oil in a large lidded saucepan over a medium heat, add the onion and cook for 6-8 minutes until soft and lightly golden. Add the garlic and cook for 1 minute more.
- Add the runner beans and stir for 2 minutes to coat them in the oil.
- Tip in the tomatoes, oregano, water and a good pinch of salt and pepper. Bring to a simmer, cover and cook gently for 30-35 minutes, stirring now and then, until the beans are very tender.
- Uncover and simmer for 5 minutes more until the sauce is thick and clings to the beans. Stir in most of the herbs, taste for seasoning and serve warm or at room temperature with the remaining herbs on top.
Swaps and tips
Like most Greek braised vegetables, this is even better made a day ahead and served warm or at room temperature. It keeps in the fridge for 3 days. Flat green beans or fine green beans also work.
Easy variations
- Top with crumbled feta before serving
- Add a few chopped courgettes with the beans
- Add a pinch of ground cinnamon with the oregano
- Use fresh mint instead of dill
