Equipment: Mixing bowl

Ingredients

  • 2 cooked chicken breasts, shredded
  • Shredded white and red cabbage
  • 1 carrot, shredded
  • 2 spring onions (scallions) and coriander (cilantro)
  • 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp ginger (dressing)
  • 1 tbsp toasted sesame seeds
  • Pinch of chilli flakes (red pepper flakes)

Method

  1. Whisk the soy sauce, sesame oil, grated ginger and chilli flakes into a dressing.
  2. Toss the shredded cabbages, carrot, spring onion and coriander together in a large bowl.
  3. Add the shredded chicken.
  4. Pour over the dressing and toss thoroughly — slaw benefits from a few minutes to soften slightly.
  5. Scatter with toasted sesame seeds. Taste before adding salt; the soy dresses it.

Swaps and tips

Keep the carrot to a small amount to limit the carbs. A bag of ready-shredded slaw makes this even quicker. Use tamari instead of soy sauce to keep it gluten-free.
