Equipment: Large saucepan; spiraliser or peeler

Ingredients

  • 120 g dried soya mince (soy crumbles)
  • 300 ml hot vegetable stock
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp tomato purée (tomato paste)
  • 1 tin chopped tomatoes, 400 g
  • 1 tsp dried oregano
  • 2 large courgettes (zucchini), spiralised
  • Salt and black pepper

Optional extras

  • 1 tbsp nutritional yeast

Method

  1. Pour the hot stock over the soya mince and leave to soak for 5 minutes.
  2. Heat the oil in a large pan and gently cook the onion, carrot and celery for 6-7 minutes until soft. Add the garlic and tomato purée for 1 minute.
  3. Stir in the soaked mince with any stock left, the tomatoes and oregano. Simmer for 15 minutes, stirring now and then, until thick. Season.
  4. Warm the courgetti in a dry pan for 1-2 minutes, then serve topped with the bolognese and nutritional yeast if you like.

Swaps and tips

Dried soya mince keeps for months in the cupboard and soaks up the flavour of the sauce. Make a double batch and freeze half. Serve on a bed of spinach if you don't have a spiraliser.
