Browned sausages simmered with butter beans in a smoky tomato sauce. A one-pot family favourite.
Equipment: Large pan or casserole with a lid
Measures and names
Ingredients
- 12 pork sausages, at least 85% pork
- 1 onion, sliced
- 2 garlic cloves, crushed
- 2 tsp smoked paprika
- 1 400 g tin of chopped tomatoes
- 1 400 g tin of butter beans (lima beans), drained
- 200 ml chicken or vegetable stock, from a cube
- Salt and black pepper
Method
- Brown the sausages in a large pan for 8 minutes (they have enough fat of their own). Lift out and cut each in half.
- Soften the onion in the same pan for 5 minutes, then stir in the garlic and paprika for 1 minute.
- Add the tomatoes, beans, stock and sausages. Cover and simmer for 20 minutes, then uncover for 5 minutes to thicken. Season and serve.
Swaps and tips
Pick sausages with at least 85% pork for more protein and less filler. Gluten-free sausages make the whole dish gluten-free.
Easy variations
- Use any tin of beans
- Add a sliced pepper or a handful of spinach
- Swap the paprika for dried mixed herbs
- Use chipolatas and cook 5 minutes less
